Ingredients
1/2 Red cabbage
1.5 yellow onion
1 red onion
2 garlic cloves
2-3 Small Scallion
1/2 red bell pepper
5-6 Mushrooms
1-2 cups Fresh or frozen spinach
3 celery branches
1 hot pepper
1 jalapeno
3 eggs
2-3 cups rice (1-2 days old is the best)
Spices:
1/4 cup low sodium soy sauce
3 tsp lemon pepper
2 tsp Cajun
2 tbsp brown sugar
3 tbsp All purpose seasoning (Island spices)
1 tbsp Tex mex
Parsley to taste
