If you are looking for a quick and delicious meal, you are at the right place. This carbonara dish takes no more than 30 mins and you will have a steaming bowl for pasta ready!
Ingredients
Creamy Cheese Sauce:
3 tbsp butter
3 tbsp all-purpose flour
½ tbs salt
2 cups milk
1 ½ cups shredded Cheddar cheese
The Potatoes & Meat:
8-10 large Yukon gold or red potatoes
1/2 red onion, chopped
1/2 yellow onion, chopped
2 celery branches
1/2 green bell pepper
1 jalapeno, chopped
2 garlic cloves
1 tbsp honey dijon mustard
1 cup beef broth
My Spices:
3 tbsp All purpose seasoning (Island spices)
1 tbsp Garlic powder
1 tbsp Cajun
1 tbsp Tex mex
1 tbsp Worcestershire sauce
3 tbsp Lemon pepper
1 tbsp Salt
Instructions
Preheat the oven to 350°F and set an oven rack in the middle position.
Grease an 8-inch (or 2-quart) baking dish with butter.
The potatoes:
Peel and clean the potatoes
Thinly slice the potatoes and onions, and mince the garlic. Use a mandoline or a sharp chef’s to thinly slice into thin slices.
In a large mixing bowl, toss the potatoes with the salt and pepper and spices to taste until evenly coated and set asides.
The meat:
In a large frying pan or Wok, fry the onions, celery, jalapenos, garlic, peppers until golden brown. add beef stock for extra flavor and juiciness.
Add the ground beef or/and pork to the veggies, season to taste and cook until browned but still juicy, set aside.
Creamy Cheese sauce:
In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds.
Layer potatoes, meat then cheese sauce until all 3 mix are done and add extra layer of cheese for topping.
Cover the dish with aluminum foil and bake for 1h at 375º
