Smoked Salmon & Aspergus Quiche

I have been wanting to make this breakfast quiche for a while now much other cravings seemed to be more URGENT! But today was the day. This delicious Smoked salmon and asparagus quiche is exactly what you have been waiting for #IGotYou

It takes less than 15 mins to prepare then all you do is pop that cutie in the oven and drink mimosas while waiting. Super easy and fun to make since all the ingredients are replaceable.

Ingredients

1 x 9” pie crust (Store bought or homemade (see my buttery pie crust)
1 pack of smoked salmon (150g or more)
6-8 asparagus
1/4 red onion,
1/4 Yellow Onion
½ celery branch
1/2 jalapenos
2 large mushrooms
4 large eggs
1/2 cup milk (May need more adjust depending on the amount of veggies)
1/4 block of cheese
2-3 tsp lemon pepper
1 tsp salt
1 tsp thyme
2 tsp all purpose spice (island spices)

Instructions

Preheat the oven to 375 F and set aside the prepared pie dish.
*If you are making the pie crust from scratch, I suggest to blind bake it (See video below)
Start my chopping all the veggies in very small chunks and add them all to a medium bowl.
Season the veggies to taste.
In a separate bowl mix the eggs and milk.
Combine the egg mix in the veggies, half of the cheese and half the pack for smoked salmon.
Poor the mix to the prepared pie crust and add the remaining cheese and smoked salmon equally.
Bake for 30-35 mins or until golden brown. I normally bake my quiche on a cookie tray because it ALWAYS spills over (less cleaning for later).
Enjoy with a side of fresh greens or just my itself!
